

I'm so excited! The first fresh mangos of the year were at the farmer's market today! I also got corn, green beans, tomatoes and apple bananas,, all locally grown. I'm excited to start my meal prep for the week after editing today! I'm making Indian food and putting extra in the freezer as heat and eat meals. I'm making the chicken I like, beef samosas, the yellow lentils and garlic naan from scratch. I was trying to make the green sauce for the samosas but they were out of mint at my store. So I obviously need to start an herb garden. Mint is ridiculously easy as are many other herbs. Another project to do! This week I'm also making steak Chinese food, which is a NY steak cut into strips, battered in a rice flour batter and twice fried. Served tossed in this delicious Asian sauce, then mixed with raw cucumber, raw red bell pepper and cilantro. It's incredibly good with rice. I'm also going to try out my Zucchini chocolate chip, butterscotch chip oatmeal cookies recipe on the waffle iorn. I had great success with waffle brownies! 😋 And of course I am making Mexican food. Tacos: flour tortillas fried in coconut oil and filled with spiced beef, whole black and refried Pinto beans (cooked separately w heavy cream and some light spices), shredded cheese and a chunky guacamole. I will make the green beans into garlic green beans with butter amd diced fresh garlic. They are so frickin good! I was also considering doing a big batch of freezer fried chicken. The corn on the cob has just sold me on it. I learned you can freeze individual portions of mashed potatoes in ziploc bags. Mine freeze especially well because of the immense amount of butter and heavy cream I add. Plus I got cornmeal for cornbread muffins. Those also freeze well. I have zero desire to cook every day. I do desire my home cooking still though! So once a week or so I try to make a bunch of meals and freeze most of it. It really helps. Next week is turkey chili amd I don't know what else yet. Suggestions? Note: it must freeze well!
